"Nanna's Currant Cake" ~ 3 Ingredients!

Note:
This cake can be made with Gluten free flour, it is also great for Diabetics, & people with allergies, lactose intolerance etc.., as the recipe does not include eggs or milk.


Ingredients

1 Cup - 250mls of cold black brewed leaf tea
(My Nanna used Bushells Lanchoo tea)
1 cup of currants (NOT SULTANAS) soaked in the tea overnight
1 cup of SR flour

Method

Soak currants in tea overnight
Preheat oven to 180oC
Baked best in a loaf tin
Mix all ingredients together & put in tin
Bake for 25 to 30mins, until golden brown
